• Put the sausage in a saucepan, wet with the white wine and add water so that it is completely covered. Slowly bring to the boil, cover and simmer for 30 minutes.
• Wash the potatoes, put them to cook in a saucepan filled with salted water, 25 min. Peel the shallots and finely chop them. Wash the parsley and chop it.
• In a bowl, pour the white wine vinegar, salt, pepper, then the shallots, add the oil and mix everything well. Drain the potatoes, let them cool without cooling them, peel them and cut them into slices. Peel the sausage and cut it into slices.
• Arrange the potatoes in a circle around the edges of the plates and garnish the center with the sausage rings. Drizzle with the shallot vinaigrette and sprinkle with parsley. Serve lukewarm
