  • History:

    Brie de Meaux is a soft cow's milk cheese with a bloomy rind. Its name comes from the region of Brie and the town of Meaux located in Seine-et-Marne.
    It has benefited from an Appellation d'Origine Contrôlée (AOC) since 1980 and an Appellation d'Origine Protégée (AOP) since 1996.
    It has the shape of a flat cylinder with a diameter of 36 to 37 centimeters. It weighs between 2.6 and 3.3 kilograms.
    Brie de Meaux has a thin, white rind, dotted with streaks or red spots.
    Its cream-colored paste is homogeneous.
    At 4 weeks of ripening, Brie de Meaux is a quarter-ripened cheese (ie 25% minimum of its height). It has a milky taste and can be slightly salty with a hint of bitterness.
    Between 4 and 6 weeks, it slowly refines from the rind to the heart, its consistency changes from brittle to supple. Its aroma develops gradually.
    After 6 to 8 weeks, the Brie de Meaux is fully ripened, its consistency is supple; it has a subtle aroma of cream, butter and hazelnut.
